We Are Seeking Representatives For The...

Dorsey Roseville
Student Advisory Board

PURPOSE
To act as a voice and sounding board for the student body in improving programs and services by communicating thoughts, ideas and concerns to Dorsey administrators, faculty and staff. Through this dialogue, we hope to create a positive learning environment that focuses on the core values of Dorsey School - Roseville.

MEMBERS
The board will consist of 8 to 12 students, representing each of Dorsey Schools’ programs. Dorsey administrators, faculty and staff members will also attend on a rotating basis.

APPLICATIONS
Applications are available in Buildings A and C at the front desk.  Initial applications are due by Friday, Nov 4, 2011. New members will continually be added as existing members graduate.

REQUIREMENTS
You must be in good academic standing with a minimum 3.5 grade point average, with the recommendation of an instructor.  The board will be selected by Dorsey administrators. 

COMMITMENT
The board will meet two to three times during each six-week module.  Meetings will be at 5:00pm during the week. Students must be available to meet at this time.

BENEFITS
Advisory Board Members have the opportunity to build their resume and leadership skills while making a positive difference in the Dorsey community.

Something To Think About

You are what you are and where you are because of what has gone into your mind; you can change what you are and where you are by changing what goes into your mind.  Think about it in this light: Your input determines your outlook.  Your outlook determines your output, and your output determines your future.

Consider: You are where you are in your financial, family, mental, social and physical life because of the thought process which has been yours throughout your life.  If you want to change what you are and where you are, then the thought process must change.  If your thinking does not change—and in many cases, significantly–your life and lifestyle will not change, unless the change is for the worse, because the only way to “coast” through life is downhill.

One of the favorite quotes used in Alcoholics Anonymous is that insanity is believing that you can keep on doing what you’ve been doing and somehow get different results.  We can paraphrase that and say that insanity is believing that if you keep on thinking what you’ve been thinking, you will somehow get different results.  Tie those two together—your thinking determines your actions and your actions determine your results.  So, if you want different results and a change in life, change your thinking.  To change your thinking, change the input into your mind.

My research reveals that, regardless of what you do and where you live, we all want to be happy, healthy, reasonably prosperous, secure, and to have friends, peace of mind, good family relationships and hope.  Now, if we really want those things, then on a regular basis we need to be reading, planting, thinking, hearing and viewing materials for our minds that produce happy, healthy, prosperous, etc., thoughts.  Think about it.  Change the input and you’ll change your life, which means I really will SEE YOU AT THE TOP!

Community Health Fair at Dorsey!

Saturday November 5th 2011 from 10:00am-2:00pm, Dorsey Schools of Roseville will be hosting a Community Health Fair for Health and Dental Awareness.

We will be providing FREE TEETH SEALANTS (while supplies last) for children and youth (ages 3-18), and a limited amount of full mouth x-rays.  We will also be performing blood pressures, diabetes screening (glucometer testing), and cholesterol screening.

By coming to the Community Health Fair for Health and Dental Awareness, you are also eligible to receive a certificate for a FREE dental consultation by Dr. Christopher Dykee.

Do you know anyone who is unemployed, needs a change or is looking for a successful career path?  Students, refer (by name and phone number) or bring two people with you to the fair that you’d like to recommend to Dorsey and you’ll be entered into the raffle for a FREE teeth whitening package!

We Had A Wonderful Time At The Halloween Family Fun Event!


It was a spooky Saturday at Dorsey Roseville as we celebrated our Halloween Family Fun Event on October 22, 2011.  In addition to our normal Saturday workshops and Open House, we also had some special Halloween activities for Dorsey students and their families.

Dressed up in all kinds of different costumes, children were able to trick or treat around the building going to different rooms and receiving candy.

Families were able to enjoy apple cider, donuts, popcorn, and of course, candy. Many of the children (and some adults) chose to decorate pumpkins or watch a Halloween movie and eat pizza (sponsored by the dental students).

Thank you to everyone involved for making this such a GREAT event!  Thanks also to our students who brought their families and shared a little bit of their Saturday with us for some fun.

Dorsey Culinary Academy Presents: “Learn To Cook Like A Pro”

Hosted by Chef Darren Wendel, CEC

Introduction to Culinary Skills “Learn To Cook Like a Pro” is the second course in a series of continuing adult education courses, which will be hosted by the Dorsey culinary academy on Saturday, November 5th 2011 from 9:30am-3:00pm. 

This course is geared toward providing professional-level skills to the amateur chef – just in time for the holidays.

ABOUT THE CHEF
Chef Darren Wendel, CEC, has been in the culinary industry for over 20 years.  His background consists of a variety of areas in the culinary industry, ranging from hotels, hospitals, the airline industry, and most recently, education.  Chef Darren holds an associate’s degree in culinary arts and is also a Certified Executive Chef with the American Culinary Federation.

Chef Darren began with Dorsey in 2011, teaching at the Roseville campus, and currently is an instructor at the Waterford/Pontiac campus where he is able to share his excitement and enthusiasm for the food industry with students on a daily basis.

COURSE OBJECTIVES
Throughout this course, participants will learn to use basic kitchen ingredients and demonstrate proper and safe use of a chef’s knife through a wide array of cutting and cooking techniques.
 

Specific topics include:
·         Kitchen safety and proper handling of knives
·         Learn to properly mince, chop, dice, grate and zest
·         Learn to sear, simmer, braise, roast and blanch
·         Demonstrate fundamental cooking skills
·         Assess final outcomes of various dishes

Volunteering: A Way To Gain Valuable Experience!

As you make your journey toward your future career, there are a few things that you can do to set yourself apart from others to give yourself a better chance of securing the position that you want.  

One of these things is volunteering.  If your volunteer work is something that is related to your career choice, you are providing service to your community and gaining valuable experience in your field at the same time.  You may even make some important networking contacts during your volunteer work that could be helpful in securing your future career.  You may meet someone that could be used as a reference, write a letter of recommendation for you, or even be a contact person in a place you would like to work. 

Here are just a handful of the many resources for volunteer opportunities that you can take advantage of:






Employers will look favorably on your volunteer experience and see that you have a passion for that particular field.  Volunteering also says that you were willing to put in extra time and effort, demonstrating that you have a strong work ethic as well as a sense of obligation to the community in which you live.

Making the Ball Bounce Your Way

Many times I use the phrase, “It’s not what happens to you, but how you handle what happens to you, that’s going to make the difference.”  Initially, the ball appeared not to have bounced Celeste Baker’s way, but that was just initially.  She has a disease in her left leg called Reflex Sympathetic Dystrophy which causes her a considerable amount of pain.  The way Celeste handled her challenge was such an encouragement to her classmates at Baldwin Jr./Sr. High School in Baldwin, Florida, that she was given the “I CAN” Award one school year.  The next example helps explain why.

One day, Celeste called her mother to come to the school.  Assuming she wanted to go home because she was in pain, Officer Keith M. Jowers, the School Resource Officer, in an effort to encourage her said, “Well, at least you get to leave school early.”  Celeste immediately responded, “Oh, no, Officer Jowers, I just want her to bring me my crutches, so I can walk.”  She refused to miss the rest of school that day.

Celeste really does have a “can-do” attitude.  She played volleyball and was on the swim team.  She even used swim competitions as therapy.  Some of the things her teachers said about her were, “She’s a very creative and delightful student,” and “Celeste has been a delight to teach.”  “Celeste is a dedicated and hardworking student that is a joy to have in my class.”  Yes, in many ways she epitomizes the “I CAN” attitude.  Certainly her approach to life is the best one.  Like we say, it’s not what happens to you, it’s how you handle it that will make the difference.  Buy that idea, adopt the “I CAN” attitude, and I will SEE YOU AT THE TOP!

Try This Michigan Trout Recipe Compliments of Chef Hall, Dorsey Culinary Arts Instructor

Dorsey Roseville’s Culinary Academy brings you this fantastic recipe for hot smoked Michigan Trout, which was cooked as part of a live demonstration, by our very own Chef Matt Hall at Macomb Mall’s Health Expo last month.  Enjoy!

Hot Smoked Michigan Trout 
with Dried Cherry Chutney
(Single Serving)

 
8 oz. Trout fillet, skin on

½ tsp. salt

½ oz. of clarified butter

½ oz. dried cherries

2 oz. shallots

1 tsp. sugar
1 Tbs. Cider vinegar

Pinch of fresh thyme

Salt to taste

1 oz. of wood chips (dry) then soaked overnight
In an aluminum 4“ half pan, place the soaked wood chips on the bottom, then place the trout on the grate on the top, skin side down.  Place another 4” hotel pan on top and clip in place with clips and place on medium high flame for 10 minutes.  Check for doneness by applying pressure to the top of the trout to see if the fillet begins to flake.  Remove and brush with butter.  Add chutney on top for garnish.

Chutney
Soak the cherries for 15 minutes in warm water. Sauté the shallots in butter, then add the sugar, cherries, and vinegar and reduce until it begins to come together. Sprinkle in the fresh thyme and garnish the trout.

Dorsey's Fall 2011 Graduation Ceremony, PURE EXCITEMENT!

“Roseville!” Mr. Mark Young, Managing Director of the Roseville Campus called, upon which the Roseville Graduating Class responded back simultaneously, “ROSEVILLE!”

Roseville!…ROSEVILLE!...Roseville!...ROSEVILLE!...Roseville!...ROSEVILLE!”

The excitement EXPLODED as our graduates were ready to be recognized and receive their diplomas on stage.  You could see it in their eyes that these graduates, many once unsure of themselves and their career path, had transformed and developed self-esteem, self-reliance, discipline and confidence!

The amount of family and friends who filled the Masonic Temple auditorium to support our graduates was unbelievable.  The cheers and applause were thunderous!  Truly an accomplishment to be proud of, no matter what type of adversity that might be faced, the education, diploma and success these graduates have earned is, “something that cannot be taken away”, as stated by guest speaker Danielle Leedy, Nurse Practitioner, University of Physicians Group.

Dorsey Halloween Fall Family Fun Event, Open House & Workshops Saturday, October 22nd!

Students, friends, and family are invited to attend the Dorsey Halloween Fall Family Fun Event Saturday, October 22nd from 12:00pm to 2:00pm.

Halloween Arts & Crafts, Games, Prizes, Refreshments and other Fun! 
    

Open House from 10:00am -2:00pm.  Do you know anyone interested in getting started on a great career path?  The Admissions Team will also be here to help potential students with program information and choosing a career that’s in demand!

Workshops from 10:00am - 2:00pm.  Catch up on school work or put together a study group.  We will also have several workshops for students on that day. Here’s a description of the workshops below:

Open Clinical Skills Lab (11am-2pm in Building C)
Students can work on their proficiencies and improve their skills during this hands-on workshop. Students can perform vital signs, ECGs, injections, and phlebotomy. This is a great opportunity to work on areas where you struggle and to continue to improve on your clinical skills. Team up with another student or bring your own family/friend/volunteer (injections can only be given to students, but friends or volunteers can participate in other areas). The more proficient you are the more likely you are to get hired.



Dental Assisting Lab (10am-12pm in Building C)
Dental assisting students can work on their proficiencies and improve their skills during this hands-on workshop. This is a great opportunity to work on areas where you struggle and to continue to improve on your clinical skills. Team up with another student or bring your own family/friend/volunteer. The more proficient you are the more likely you are to get hired.
