What’s Cooking Detroit Food & Cooking Expo Is Sure To Be Inspiring!

Plenty will be on the burner at the What’s Cooking Detroit Food & Cooking Expo, coming April 21st to The Palace of Auburn Hills.

Dorsey Culinary Academy will have a big role at the daylong event.  Instrutors will be doing demonstrations, and students will be picking up valuable experience.

For one thing, students will be lending a big helping had to Buddy Valastro, star of TLC’s “Cake Boss”.

John Piazza, culinary arts program director at Dorsey Schools said, “it’s kind of a behind-the-scenes opportunity for students.”

Valastro will do cupcakes a veal dish, so Dorsey students will help that along – “preparing the swaps” – having everything pre-measured to go, baking items in advance, and ultimately giving the Cake Boss time to focus on his demonstration.  Piazza agrees it’s like what you’d view on any cooking show; you don’t see al the chopping and measuring, but simply see how they make the dish.

Dorsey students will work with instructors giving demonstrations, too, as a number of cooking stages are planned for the show, includeing technique, healthy living/cooking, and “taste of the neighborhood,” which has some of the best local chefs cooking up their restaurant specialties.

Piazza said the popularity of culinary arts is more sizzle than fizzle, adding that Dorsey, with culinary campuses in Roseville and Waterford, has the only one-year program in Michigan (via the American Culinary Federation Education Foundations).  Programs attract a diverse student body from those right out of high school to people seeking a second career.  Its great hands-on work, Piazza adds, especially with a 12-week externship course that provides practical work experience.  It’s a chance to be artistic and creative, too.

Career options are broad: Sous chef, food preparation, short-order cook, catering, baking and beyond, with the advantages of a quick education and job placement help, too.

GREAT Community Health Event Volunteer Opportunity for Dorsey Students!

We are looking for 12 student volunteers to participate in the upcoming “No Family Left Behind”, community health event on Saturday, April 28th, 2012.

We will be providing blood pressure screening, diabetes screening and possibly cholesterol screening for disadvantaged families for approximately 400 participants.

This is an excellent opportunity for students to put their skills to the test, to work side by side with faculty and to give back to the community.  All volunteers will receive a certificate of participation, another great way to build your career portfolio.

Sports & Jeans Day April 19th, Proceeds to Benefit the Special Olympics

Thursday April 19th
Sports & Jeans Day!

Wear your favorite sports team apparel with your jeans this Thursday,April 19th for a $1 Donation, brought to you by your Student Advisory Board. 

Proceeds will benefit the Special Olympics, an international program of year-round sports training and athletic competition for persons with intellectual disability.

Special Olympics began in 1968 when Eunice Kennedy Shriver organized the First International Summer Games at Soldier Field in Chicago, Illinois, USA. The concept was born in the early 1960s when Shriver started a day camp for people with intellectual disability. She saw that individuals with intellectual disability were far more capable in sports and physical activities than experts thought.

In December 1968, Special Olympics was established as a nonprofit charitable organization under the laws of the District of Columbia, USA. The National Association for Retarded Citizens, the Council for Exceptional Children and the American Association on Mental Deficiency pledged their support for this first systemic effort to provide sports training and athletic competition for individuals with intellectual disability based on the Olympic tradition and spirit. Since 1968, millions of children and adults with intellectual disability have participated in Special Olympics around the world.

Saturday Open House & Skill Building Workshops!

Students, friends, and family are invited to attend the Dorsey open house on Saturday, April 14th, from 10:00am to 2:00pm.

What a great opportunity to show your friends and family where you go to school.

Do you know anyone interested in getting started on a great career path?  The Admissions Team will be here in Building ‘A’ to help potential students with program information and choosing a career that’s in demand!

Catch up on school work or put together a study group.  We will also have several workshops on that day. Here’s a description of the workshops below:


Open Clinical Skills Lab (10am-2pm in Building C)

Students can work on their proficiencies and improve their skills during this hands-on workshop. Students can perform vital signs, ECGs, injections, and phlebotomy (vacutainer only). This is a great opportunity to work on areas where you struggle and to continue to improve on your clinical skills. Team up with another student or bring your own family/friend/volunteer (injections can only be given to students). The more proficient you are the more likely you are to get hired.


Dental Assisting Lab (10am-2pm in Building C)

Dental assisting students can work on their proficiencies and improve their skills during this hands-on workshop. This is a great opportunity to work on areas where you struggle and to continue to improve on your clinical skills. Team up with another student or bring your own family/friend/volunteer. The more proficient you are the more likely you are to get hired.


Computer Skills Lab (10am-12pm in Building C)

This is a great hands-on workshop for all students. You will learn important things like how to login, how to use the Dorsey network and access your student folder, and other basic skills to improve your success at Dorsey. These skills will prove valuable throughout your learning experience at Dorsey, at home and in the workplace.


Career Services Workshop “Me Inc., Become The CEO of Your Career" (11am-12pm & 1pm-2pm  in Building C)

Take charge of getting into your career.  This workshop will give you motivation and help you get into your career field. 



Medical Billing Lab
(11am-1pm in Building C)

Students can brush up on billing skills, get extra help and/or work on billing proficiencies.  The more proficient you are the more likely you are to get hired.

How To Get An 'A'

For some students, getting an 'A' may seem to come naturally.  For others it may be a little more difficult.  Here are some guidelines on achieving A's in your classes that will help you to understand exactly what it is you need to do if you're not getting A's and what it is that those that get the A's do to get them. 

  1. Make the decision to commit yourself to earning an 'A'.
  2. Attend and ask questions daily in each class.
  3. Take good notes.
  4. Know the syllabus inside and out, and adhere to its deadlines and policies.
  5. Consider joining a study group, getting tutoring, or reviewing supplementary study material.
  6. Meet with the instructor before or after class for additional direction or assistance.
  7. Work on assignments immediately to give you time to revise, revise, revise, and practice, practice, practice.
  8. To prepare for every class, read the assigned chapter beforehand and note any questions.
  9. After class, review anything you didn't understand, look up answers to quizzes, and tackle the study guide.
  10. Read everything. Highlight relevant material. Remember, if you get behind, it is difficult to catch up.
  11. Check the class (Internet) Web page often (If your instructor uses Edmodo or another online tool). Many professors put most of the news, events, and items of interest for students on this page.
  12. You may need to work on your writing (communication skills) above all else. Get a writing handbook, style guide, and a good college dictionary.  You may also wish to attend the Adult Educational Growth Classes on Thursdays or work on your Aztec Module Tutorials.
  13. Know your concepts, your terminology, and your facts.
  14. Set aside a regular study schedule and give yourself enough time to master the material. At a minimum, students are asked to study two hours a week for every hour in class.
  15. Periodically review lecture notes and other study materials.
  16. Use a 6 week (module) planner.

To prepare for a test:
  1. Review all reading and lecture notes, making an outline of important information.
  2. Create a sample test, take it, and then go back and concentrate on your weak areas.
  3. If you can't seem to remember the material, write it, recite it, or think of associations which will help you remember during the test.

Culinary Students Shine at the Matrix Center's Sunrise Pancake Breakfast!

Eight Culinary Students from Chef Turner’s 104/105 class signed up to volunteer at the Matrix Human Services Center to give-back to the community, showcasing their culinary craft and to continue to help build their experience in culinary events and volunteerism.

The 8 students from Chef Turner’s class went above and beyond this year for the event, held on March 24, 2012, as they not only planned the menu, but prepared the food order for the event, showed up a day early for the event to prep food, performed “Culinary Math” for recipes, brought mixers/ equipment from home that they needed for their “signature” dishes they were serving, and cooked the day of the event for the 300 people who attended the event.

Dorsey’s Culinary Academy students made Quiches, Fruit Kabobs, Omelets, Scrambled Eggs, Biscuits & Gravy, Sausages and more.

Ken Brown the Assistant Director of the Matrix Center had this to say about Dorsey’s participation in the Sunrise Pancake Breakfast event:

“The group of students from Dorsey Culinary did a tremendous job during the pancake breakfast. The dedication they showed to our organization was without question one of the most thoughtful things I have seen. We would not have been able to pull it off without them. They went as far as to tell how much food they thought we should buy to feed 300 people, created the list, arrived at 7am after prepping the day before. The group was great, Thank you, Thank you greatly.”
